One of my favorite things to do is experiment in the kitchen. Spices are so complex and to be honest I typically stick with handful of tried and true combinations I love when I cook. I wanted to make something that would have a warm, comforting feel while still being healthy and simple. The first time I made this I used boneless, skinless chicken breast. It was okay but still lacked something. The second time I made it I used chicken thighs with the skin still on. My husband said it is the best chicken he has ever had, although he may be a little biased.

Cosmic Brownie Cake

I am wondering who else has home movie VHS tapes collecting dust somewhere in your house? The other day I sent off a collection of VHS tapes and a handful of old pictures to get digitalized. The process of sorting through and deciding what photos to send was a hard task and I enjoyed reminiscing my childhood. My sister sent me a box of tapes she had as well. I haven’t seen the footage for years so I cannot wait until they are returned in a few weeks so I can laugh at what an awkward child I was.

Happy New Year everyone! Today marks the second Blogiversary of The Ruby Kitchen. The past few days I have spent in reflection of 2015 and setting goals for 2016. Typically I like to wrap up the year sharing the joys and frustrations that came along during my blogging journey. It’s a fun way of looking back at the year at the triumphs and tragedies that happened in the kitchen.

This year was a hard year for me personally and was filled with obstacles, grief and physical limitations making it difficult for me to blog. Instead of dwelling on this I decided to share the Top 3 blog posts from 2015 and focus on the positive.

Cinnamon Citrus Butter (Mason Jar Gift)

I cannot believe Christmas is almost here. I love the holiday season and spreading cheer to others. One of my favorite traditions is making small gifts to give our neighbors. We live on a small court full of townhomes and we have been so lucky to have awesome neighbors. As we got to know them throughout the year a tradition began where we each go house to house on Christmas Eve handing them small gifts or homemade goodies.

It is a simple, beautiful way of giving from the heart that truly captures the spirit of Christmas to me. Over the years we have also been blessed to receive lovely things from them as well. A delicious meringue-topped Chocolate Pie always finds its way to the door, a beautiful handmade glass ornament, homemade preserves, cookies and more.
